From vineyards entirely of Nerello Mascalese grown on volcanic, sandy soils, rich in skeleton and organic substances. Arranged in terraces. On the South / East side of the Etna Volcano at 760 m a.s.l. Surrounded by chestnut, oak and gorse woods that give the vineyard a medium temperate microclimate ideal for the ripening of the grapes, with strong temperature changes, between day and night. For over ten years organic farming has been practiced, regularly certified. The vinification of the grapes takes place by cold maceration for 24 hours in contact with the skins, before undergoing a soft pressing. Fermentation after 48 hours of static settling, fermentation for about 20-25 days at controlled temperature (15 – 18 ° C). Maturation in steel tanks for 3 months on fine lees. And refinement not less than 3/4 months in bottle. Soft pink with bright reflections. With notes of rose hips, currants, wild strawberries, pink grapefruit, dehydrated fruit and spices. On the palate great freshness and minerality in the mouth, persistent and harmonious overall.
